Low carbohydrate recipes are good to have on hand to keep you on your low carb diet. Without some creative low carbohydrate recipes, you might get bored and decide to quit, which will only result in your gaining the weight back--and maybe more.
Low Carbohydrate Recipes
One of the reasons low carb diets are waning in popularity is because as good as your food options sound at first, (steak, sausage, bacon, chicken, ribs, etc.) it can get boring really fast. However, with an aresenal of low carbohydrate recipes at your disposal, it doesn't have to be that way.
Where to Find Low Carb Recipes
There are a lot of cookbooks now that are full of low carbohydrate recipes, including cookbooks that cater to the Atkins diet, the South Beach diet and many other popular low carb diets. Then there are just your basic low carb diet cookbooks that aren't specific to any low carb diet in particular, they just feature low carbohydrate recipes that will work on any low carb diet. It's nice to find low carb cookbooks that have pictures of how the dish is supposed to look, as well as the nutritional information for each dish.
However, buying cookbooks can get expensive. That's where the Internet comes in. We've surfed the Internet and found low carbohydrate recipes for breakfast, lunch and dinner that we think are simple and aren't time consuming. Of course, we've given each site the proper credit.
Farmer's Breakfast

1/2 pound bacon
2 boiled potatoes
1 onion
8 eggs
salt
black pepper
1. Cook bacon until crisp. Remove from pan, drain on paper towel.
2. Pour off all but 3 tablespoons bacon fat. Saute onions in bacon fat until soft.
3. Add potatoes and cook, stirring often, until potatoes start to brown. (If potatoes stick to pan, add more bacon fat.)
4. When potatoes begin to brown, add bacon and eggs. Cook, stirring constantly, until eggs set.
5. Season with salt and pepper to taste.
Ham and Bean Soup

8 oz. cubed ham
1/4 cup finely diced celery
1 cup water
1 cup low-sodium chicken broth
1 can Eden Black Soy Beans
1/4 cup tiny diced carrot
2 teaspoons minced onion
1/4 teaspoon minced garlic (optional)
1/8 teaspoon cayenne pepper
1/4 teaspoon cumin
1/4 teaspoon salt
1. In a medium sauce pan brown the ham. Add 1 cup of water and scrape glaze off bottom of pan. Add low-sodium chicken broth.
2. Drain the water from the can of beans. Add beans to the sauce pan.
3. Add all other ingredients. Stir. Bring to a boil; turn down heat and simmer for at least 1 hour to bring out the flavors -- the longer, the better (3 hours or more being best).
Low Carb Baked Chicken

1 pound boneless, skinless chicken breasts
1/4 cup Parmesan cheese
1 cup chicken broth
Salt and pepper to taste
1. Preheat oven to 400.
2. Place chicken in a glass baking dish.
3. Pour 1 cup of chicken broth over the chicken. Sprinkle the Parmesan cheese on top. Salt and pepper to taste.
4. Bake for 35 to 45 minutes or until liquid runs clear.
